makes 10 servings
10 small fat free flour tortillas
1 pound uncooked boneless chicken breast, cut into bite size pieces
16 oz bag frozen 3 pepper/onion mix
one 16oz can fat free refried beans
one 10oz can enchilada sauce
1 1/2 cups shredded fat free cheddar
Preheat oven to 350. Saute veggie blend in large skillet til tender. Remove from pan and set aside.
In same pan, add chicken & 2 Tbs enchilada sauce. Saute chicken til done.
Add veggie mix to chicken along with refried beans. Mix well to combine. Continue cooking til beans are hot.
Spray 13x9 pan with non stick spray. Place 3 Tbs enchilada sauce on bottom of pan to coat.
Place 1/3 cup of mix into tortilla, roll up and place, seam side down, in pan.
Evenly distribute remaining enchilada sauce over enchiladas. Sprinkle with cheese.
